I am all for trying new things. I am still finding, other than beans, my go-to item as a vegetarian. Even this recipe has beans in it. I generally go to chick peas or black beans so like when things get mixed up with white beans.
A warning on this recipe: I needed to add additional fluid to the recipe and I did not simmer nearly as long as required. Also, this was really spicy. I have eaten a lot of really hot things but this had me eating with a glass of red wine in my hand. My son says that the longer you simmer with the cracked red pepper in the soup, the spicier it will be so next time I make it, I will use less of that ingredient.
The soup definitely tastes better than the photo looks so try it and enjoy!
Spicy Bean Soup with Wild Rice
Ingredients
1/2 cup great northern beans
1/2 large onion, sliced
1 clove garlic, minced
2 cups water
1/2 cup wild rice
1 tsp. Italian seasoning
1/2 tsp. cumin
1/2 tsp cloves
1/2 tsp red pepper flakes
1 oz. Mozzarella cheese, shredded
Directions
- Saute’ onions and garlic in 1 Tbsp. oil, until translucent.
- Add 2 cups water, beans, rice and spices. Simmer for 2 hours.
- Top with Mozzarella cheese and serve (makes 3-4 servings).
Yummmy. I love spicy and I love soup.
I might have to try something like this soon. It is cold here in SC.
