Freekeh Foods

The package that arrived with the freekeh in it was a true surprised. I could not wait to try this grain as I am always looking for new foods to fit in my vegetarian lifestyle.

Freekeh is an ancient roasted grain with a nutty, chewy texture. Freekeh Foods offer it organically in 3 varieties: Original, Rosemary Sage and Tamari. Freekeh has more fiber and protein than brown rice – which is a staple at my home.  Because of my love for the flavors of fall, I asked to try the original and the rosemary sage and am glad I did.

When I started cooking the rosemary sage freekeh, my kitchen began to smell like Thanksgiving. I immediately starting building a recipe to use freekeh instead of bread in a dressing for the holiday. I’m going to saute celery and onion in a pot and then add water and a full package of freekeh, some additional rosemary and sage, and cook to get a stuffing/dressing substitute.

For now, though, I treated the original freekeh as I would rice in my house so added beans to it for a meal one night with some garlic and some onion powder. This tasty meal – while slightly bland looking as I only had white beans in the house that day – filled me up one night.

I also spent a good deal of time perusing the recipes on their website to  see additional ways to utilize freekeh in a meal.
