I love to eat foods that are local as much as possible. Today, I am having pita chips and just made salsa.

My Salsa Recipe
Juice of one lime
Three tomatoes – chopped small and de-seeded as much as possible (I don’t really worry about this like I probably should)
Corn – one ear of local sweet corn cut off the cob
One Jalapeno pepper – deveined and de-seeded, diced
One sweet onion, diced
Combine all ingredients and let sit for flavors to meld together. Enjoy!!!
I like your idea of putting fresh corn in your salsa. I’ve been enjoying making salsa verde all summer long with fresh tomatillos and plenty of cilantro.
