A Summer Evening Walk

Mondays are generally the day of my training schedule for cross training.  Last week was week one of marathon training for me but in reality, it was week six.  Yes, I started at week six.  So last week, I did a DVD that included some cardio and some weight training.  It was a good 30 minutes.  This week I opted for a walk… with my 16 year old son, the baby.  No “!!!” tags here but a slide show to share what we saw.  This is a route that I frequently run on.

Summer is Here

Okay, so the weather is going to be more spring-like this week here in upstate New York.  However, the end of school year activities – from picnics to Regents exams to amusement partk trips to graduation and graduation parties – are in full swing.

I have created a new cookie.  Actually, my pumpkin chocolate chip cookies are always being requested.  I love them as they are drop cookies so easy to bake.  They also contain no eggs so a plus for my kids’ friends who are vegans.  Unfortunately, I needed to bake cookies in 90 degree heat on Saturday and realized that, though canned pumpkin was on my list at the grocery, I had forgotten to buy pumpkin.

I decided to take a normal chocolate chip cookie recipe and add to it.  I added the zest of one orange and the juice of said orange.  The cookies are absolutely delicious.  Here’s the recipe.

Orangy Chocolate Chip Cookies

1 1/8 cups all purpose flour

1 1/8 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

Zest of one orange

1 cup butter flavored Crisco

¾ cup sugar

¾ cup packed brown sugar

1 teaspoon vanilla extract

2 eggs

Juice of one orange

2 cups chocolate chips

 

Combine flours, baking soda, salt, cinnamon and orange zest in small bowl.  Sift or whisk together.

 

Cream Crisco with sugars and vanilla extract.  Add eggs and juice of the orange.  Slowly, add in dry ingredients.  When well combined, add chocolate chips.

 

Drop by spoonfuls onto parchment paper covered cookie sheets.  Bake for 11 minutes at 350 degrees Fahrenheit. 

 


Summer Planning

 

Wow! It is finally warm here. I have on shorts and a sleeveless shirt and am not cold. So my mind is turning to summer. It may approach 80F here and that is definitely summer temps.

This is going to be a different summer for me personally. Normally, summer seems rushed and cramped. My three college-aged kids who do not live at home come home. Unfortunately, those kids still at home have spent ten months living without these older three here and have expanded their personal space. We cram everyone back into the house.

This year, none of my older college-aged kids will be home. My oldest is graduating from college this month. He is thinking he will stay in Syracuse, where he has a real job starting in September. He is looking for a place to live and a summer job. The twins are both staying at school – one to work a part-time job in IT on campus and take eight credit hours, one to be a full-time RA for the summer.

So what will the three kids at home be doing? At least one is going on vacation with a friend. I really feel for Ocean City. I may want to go visit before this group gets there. My youngest will attend a summer program held locally and go to Scout camp for a week. He will also have scouting campout in June and August. It is the 16 year old that will need some thing to do. He has picked up one lawn mowing job for the summer. He is looking at a diving camp and possibly a tennis camp too.

So, what are your summer plans? Because I definitely need to make some of my own.


Do I dare tempt fate?

Do I dare tempt fate? I have managed to clear a space in the laundry room – no small feat – and want to bring in from storage the boxes with spring/summer clothing in them and swap out the winter items.

What happens when I do this? Unfortunately, history has proven that I end up with a snow storm the minute I do this. I mean, in the fall/winter, when I go to change out the spring/summer clothing, Indian summer ultimately shows up. So I am sure if I do this now, I will be to blame for the snow that will follow.

Unfortunately for me, the timing of this wardrobe switch is out of my hands. My 12 year old is playing school tennis. When his summer clothing went away, I only left him one pair of shorts to wear and he needs more than one pair. Maybe I should be honest. I need him to have more than one pair as I hate doing laundry!
