Halloween ATC

I am in a Halloween ATC swap through The Latest Trends in Mixed Media.  I went a little out of the ordinary as my ATC is off the basic size of 3.5″ x 2.5″.  I put a popup haunted house on the background that is offset – making the card too big.  It is creative license – I hope.

I was going for the haunted house where the house is night all the time, even though it was daylight around the house.  How did I do?

Freezer Cooking

I was going to start this post a while back but it, instead, turned into a post about pantries.  I have several friends who freezer cook.  You may also hear it called Once A Month Cooking.  It is extremely popular with busy families as your food is in your freezer.  One group of friends even swaps meals.

I admit, as much as I love to cook – and I do!, I have trouble thinking of cooking enough food for a month at one cooking session.  All I see is a huge mess in my sink as I don’t have a dish washer.  I do this in slightly smaller quantities/duration as I also do not have a big freezer any longer.

I want to hear what you all think of freezer cooking so I have gathered some resources for you.  Please look at these sites and articles and then let me know what you think.

September 2008 Issue of Chewin’ the News - Please be sure to look down at the table full of food Nancy is going to prepare in one sitting.  That may look overwhelming but to me, it is inspirational that one person can do that much work in one day.

A Beautiful Fall Day

That first day that there is frost is always a plus in my book.  The air is brisk most of the day.  The sky is clear.  Saturday was that day.  My son, who was insistent on going to a neighboring school to watch a girls’ diving invitational, had to scrape his car windshield for the first time.  I was going to go but decided to stay home instead.

So, what do you do on a beautiful fall day?

I baked.  I made apple muffins with a struesel topping.  I made date bread.  I watched my Mountaineers play football.  I went for a walk.  You can see a portion of my day in photos below.  Don’t ask why I am obsessed with the farm equipment in the field.  I just am.
